According to the U.S. Department of Agriculture, less than one percent of American children eat the federally recommended amount of fruit and vegetables daily. In a paper published in the August issue of the Journal of Economic Psychology, Sonam Gupta and University of Florida researchers studied the effect of “nudges” on children’s food choices. They found that students in the group that received nudges chose 51 percent more fruit, 29.7 percent more vegetables, and 37 percent more low-fat milk than the control group.
